If you have an android phone download wifi analyzer and make sure there’s not a whole bunch of other wifi access points around you crowding the channel.

Cat6 is of no benefit over Cat5e but costs more. The Cat6 spec. only has any relevance when running at 10GE and then you need the standard moulded plugs on there. Crimping you’re own RJ45 plugs on Cat6 is just harder because of the slight extra thickness with shielding.
